This case study is one of eight conducted to describe successful bulk food processing companies in Manitoba and give insight into opportunities for growth and innovation in these industries. True North Foods is a privately owned ruminant processing facility located north of Carman, Manitoba, currently the largest provincial beef processor. Following recent upgrades to the facility the company is pursuing federal certification for slaughter and processing of cattle, bison and elk to “block ready” cuts.
